Yummy Pikelets

"These pikelets are thick and fluffy. With your choice of jam and whipped cream they become out of this world!!"
Ingredients:

125 g self-rising flour
10 g castor sugar or superfine sugar
1 egg
15 g butter, melted
120 ml milk, or as needed
Directions:

1.Sift the flour into a medium bowl, and stir in the sugar. Make a well in the center, and add the egg. Stir with a wooden spoon while gradually pouring in the milk until you reach the consistency that you prefer. Thicker picklets will need a thick batter, while thin picklets will need a thin batter. Stir in melted butter last, beating until smooth.
2.Heat a skillet over medium heat. Coat with cooking spray. Drop by large spoonfuls onto the hot skillet. Picklets should be about 2 inches across. Flip when bubbles appear on the surface, and cook until browned on the other side.

I think these are what we call "pancakes" or "flapjacks". I've never heard of pikelets though.

I believe you are right! Pancakes. I do love them with jam or syrup. But mostly jam.

Yep, you are both kind of right, lol!! Here in Australia, we make either pancakes or pikelets. Pancakes are large and thin.......but pikelets small and thicker! The consistency is totally different. I buy a ready made packet for theboys to makeup mostly by themselves. Depending on what you want to make.....pikelets or pancakes..........you add more milk and eggs. Pancakes calls for a runnier mixture, so they are large and thin. But pikelets call for a thicker mixture, so the little guys are smaller and thicker!! My boys love just butter on them...........but jam is awfully good too! When I was little, my Mum used to put jam and cream on them, oh yummy!!
